Crispy Ravioli With Sausage
1 Tbsp olive oil
1/2 lb Italian sausage, casings removed
2 garlic cloves, chopped
6 oz spinach or kale, chopped
Salt and pepper, to taste
1 cup tomato sauce
1 lb ravioli, cooked to slightly al dente
1/2 cup grated parmesan

1.  Preheat broiler with a rack about 6 inches from heat source.

2. In an ovenproof skillet (at least 10 inches wide), heat the oil over medium heat. Add the sausage and brown until fully cooked. Remove the sausage from the pan, leaving the drippings behind.

3. Add garlic and cook briefly, until slightly golden. Add the spinach or kale and cook until wilted (up to 2-3 minutes).

4. Stir in tomato sauce and sausage to the skillet and bring to a light simmer. Season with salt and pepper to taste.

5. Immediately add ravioli to skillet and toss with the tomato sauce and greens. Sprinkle parmesan evenly over the ravioli.

6. Place skillet under the broiler and cook until the cheese is browned and crispy, for 3 to 6 minutes, depending on your boiler.
