One of the biggest challenges to cooking good meat is cooking it to the right temperature. Over the years, the USDA has changed the Meat Temperature cooking Guidelines, and they might be different from what you’d expect.
I remember eating pork chops cooked so hot that they were tough enough to use as a hockey puck. And fortunately, the guidelines have changed, so you can have delicious, tender pork and feel confident knowing it will be fully cooked and safe to eat.
It’s also important to remember that for specific cuts, like pork shoulder, you’ll cook your pork far beyond the “safe to eat” temperature to become fully tender and reach its glorious deliciousness.
Just so you know, those hockey puck pork chops I referred to were cooked by a family friend, not my parents, who are actually in the Half Pig Academy!
