Ginger Noodle Salad
1/2 lb rice or soba noodles
1 Tbsp sesame or peanut oil
2 Tbsp light brown sugar, packed
1/4 cup rice vinegar
1/4 cup lime juice
2 tsp soy sauce
2 garlic cloves, minced
2 Tbsp minced fresh ginger
1 Tsp chili paste
3 scallions, finely chopped
2 ears sweet corn, kernels removed from cob
1 medium cucumber, chopped
2 Tbsp chopped cilantro
1. Mix brown sugar, vinegar, lime juice, soy sauce, garlic, ginger, chili paste and 1 scallion in a bowl and whisk together. Let sit for at least 15 minutes to let the flavors combine.
2. Cook the noodles according to package directions. Drain noodles and run cold water over them to stop the cooking. When well drained, add the oil to the noodles to prevent them from sticking together.
3. In a large bowl, combine the noodles, remaining scallions, corn, cucumbers, cilantro, and dressing. Toss to coat everything with dressing.
