This Dirty Rice recipe is a meaty dish that just may become your favorite rice dish of all time. Pork organ meats give this dish such a deep flavor.

Dirty Rice
1 pig tongue (pealed)*
1 pig heart
1-2 pig kidneys (trimmed)**
4 Tbsp unsalted butter
2 large onions, finely chopped
2 celery stalks, finely chopped
4 garlic cloves, minced
1/8 tsp cayenne powder
sea salt and ground black pepper to taste
2 cups chicken, pork., or veggie stock
1 cup wild rice, uncooked
1/3 cup fresh flat leaf parsley
* To remove the outer layer of skin on the tongue, boil in water for up to 10 minutes, then use a knife to cut away the outer skin (or peel the skin by hand).
**To trim the kidneys, use a paring knife to cut out the white gristle from the interior of the kidney.
DIRECTIONS
1. Finely chop all of the organ meat and combine in a bowl.
2. In a large skillet, melt the butter over medium heat. Add the meat, onions, garlic, celery, and cayenne.
3. Saute, stirring frequently for 1-2 minutes. Then reduce heat to medium low and continue stirring, until the veggies are browned and tender, and the whole mixture is fully cooked, about 45 minutes.
4. While the meat is cooking, bring the stock to a boil in a saucepan over high heat. Add the rice and return to a boil.
5. Reduce heat to low, cover and cook for 20 minutes. After 20 minutes, uncover and check to see if the rice is tender and the liquid absorbed. If not, continue cooking and check every few minutes.
6. When rice is cooked, set aside to rest , covered for about 10 minutes.
7. Add the parsley to the meat mixture and continue cooking for about 5 minutes. Add the rice and cook, stirring frequently, until heated through and the flavors have blended, 3-5 minutes.
8. Adjust the salt and pepper to taste. Transfer to a bowl and serve immediately.
