We bought another cow. Like the last one, it wasn’t destined to graze our pastures. Raised carefully on a farm an hour west of here, it was destined for our freezer.
Our butcher tells us he clocked in at over 800 lbs hanging weight, which means that he was well over 1,100 lbs living. It’s astounding that an animal could grow that big and strong from eating grasses alone, isn’t it?
The color of the meat is just as striking as the size – a dark and deep shade of red, with beautiful white streaks and flecks of marbling coursing through it. The flavor, thanks to all those days on protein-rich pastures, is rich and satisfying.
This is the second cow we’ve ever purchased and it feels novel, in part because it involves a whole new line up of cuts, some of which, I’ll admit, I’d never even heard of before a few months ago.
We’re learning a great deal (and we know you are too!) and are working on sharing that knowledge with you as we go along.
