I had a dream that I was walking around the farm with an old friend, introducing him to our pigs who miraculously just learned to fly, when Greg arrived on the scene, driving a tractor trailer with a cow on top.

The very next morning, right after I told Greg about my strange dream, I checked my inbox and found the email we had been waiting for. The grass-fed beef farmer we’d be talking with for some time, was interested in working together.

We already knew her beef was fantastic – we taste tested it with friends this past summer and everyone was thoroughly impressed.

But, as you know, you can only learn so much from conversations, emails and website perusing. We wanted to learn more and knew we needed to see their farm for ourselves before moving ahead.

A few hours later, we found ourselves standing in a snowy field with big brown cows beside us talking to Kathy and her husband Dave at their farm Utley Acres, located outside Buffalo.

We came with notebooks in hand and a list of questions we knew you’d want us to ask. And without any prompting on our part, she ticked every single box.

Regenerative farming practices… check. 100% grass-fed… check! No herbicides, pesticides or chemicals…check!!

We talked it over. We slept on it. We remembered all the conversations (not to mention the survey responses!) that we’ve had with you over the past 6 months and the strong demand for grass-fed beef in our community.

And then, we went ahead and bought a cow! Our steer won’t be here to graze our pastures or meet our pigs – which for the record, have definitely NOT learned how to fly.

But I think we’ve found the very best beef farmers to work with and we couldn’t be more excited to share our first 100% grass-fed cow with you.
