A quick and simple method for making PERFECT Pressure Cooked Dry Beans every time! The trotters add a wonderful pork flavor and a silky texture to the beans. Just simple ingredients and 1 pot required. This recipe is possibly the most frequently cooked dish in our house!

Perfect Pressure Cooked Dry Beans
2 cups dry black beans
1 onion diced
3.5 cups water
1 or 2 packs of pigs trotters
2.5 tsp sea salt
1 tsp ground cumin
1 tsp ground coriander
2 tsp chile powder
1 tsp paprika
3 garlic cloves, sliced
1. Rinse the dry beans in cold water, place in pressure cooker.
2. Add 3.5 cups water, chopped onion, pigs feet, salt, spices, and garlic to pressure cooker.
3. Cover and cook on high pressure for 35 minutes.
4. Allow pressure to release naturally for 15 minutes, then release pressure manually.
5. Remove trotters from pressure cooker and allow to rest for 5 minutes.
6. Serve your beans with rice, sautéed veggies, tortillas and/or the trotters.
7. Enjoy!
