As we get into summer, we’re trying to find ways to use our grill more often, so we’re bringing a new cut of pork to market this week: kabob meat! We tried these tasty curried pork kabobs with our favorite yellow dal recipe this week. The one word to describe it = bomb!
Curried Pork Kabobs
1 lb kabob pork
2 tsp curry powder
1 large clove garlic
1 tsp kosher salt
1 tsp ground cumin
1 tsp ground coriander
a pinch of cayenne
3 Tbsp lemon juice
1 tsp olive oil
1 tsp water
1. Make marinade by combining garlic, spices, salt, lemon juice, oil, and water in a food processor. Blend until fully combined.
2. Place pork in a bowl and pour marinade over the meat. Mix until the pork is evenly coated. Cover and refrigerate for 2-6 hours.
3. Heat grill to medium high heat (gas or charcoal). Thread pork onto skewers and grill over direct heat.
4. Turn periodically until browned on all side, approximately 8-12 minutes.
5. Serve immediately and enjoy!
