We’ve been determined to find a tasty recipe for trotters (farm lingo for pigs feet). And, we’ve found it. You’ll have to be okay eating with your hands…and getting a little sticky…and love the taste of crispy pork fat (think bacon). But, oh my. This Spicy Roasted Pigs Feet recipe is really delicious!

Spicy Roasted Pigs Feet
4 packs of pigs feet
1/4 cup soy sauce
2 tsp salt
1/4 cup + 1/8 cup brown sugar
1/4 cup sriracha
1/2 cup water
1. Preheat oven to 325F.
2. Combine soy sauce and brown sugar in a small pot. Boil on medium heat until the sauce thickens and resembles maple syrup. Keep a watchful eye on this so you don’t over boil. As the mixture cools down it will further thicken.
3. Rinse all of the trotters and place them in a dutch oven (or a shallow pan). Combine the sweet soy sauce and sriracha in a bowl and pour the mixture over the trotters. Add the salt and water to the bottom of the pan.
4. Cover pan with foil or lid and braise trotters in oven for 2.5 to 3 hours. Baste the trotters once or twice while they’re cooking. When finished, the trotters should be very tender, but not falling off the bone.
5. Remove from oven and let cool briefly. Start heating your grill (gas or charcoal).
6. When the grill is hot, arrange the coals or burners so that you can indirectly cook the trotters. Place the trotters on the grill and cook, covered, for about 20 minutes, turning occasionally to prevent the skins from burning.
7. When nicely browned, serve immediately and enjoy!
