Don’t get me wrong. We’ve made ribs before and have been pretty happy with the final product. But this recipe that Jenney heard about on NPR a few weeks back called “Best-Ever Barbecue Ribs” really did give us the best-tasting ribs we have ever tried.  Give it a try, and let us know what you think.

Barbeque Ribs
1 1/4 Tbsp Kosher salt
1/2 Tbsp dry mustard
1/2 Tbsp paprika
1/4 tsp cayenne pepper
1/4 tsp freshly ground black pepper
1 rack of spare ribs (approximately 2 lbs)
3/4 cups of your favorite store-bought or homemade barbecue sauce (we like this super simple recipe) plus more for serving

DIRECTIONS

1. Preheat oven to 350 degrees. Combine first 5 ingredients in a small bowl.

2. Place ribs on a double layer of foil. Rub spice mix all over the ribs and wrap them in the foil.

3. Bake ribs until very tender, but not falling apart about 2.5-3 hours.

4. Carefully unwrap ribs, pour any juices from the foil into a heat-proof measuring cup to reserve the juices. Let ribs cool completely.  (Ribs can be baked up 3 days ahead, the flavor will be more developed and the cold ribs will hold together better on the grill as they heat through.)

5. Heat a gas grill to high (or build a medium hot fire in a charcoal grill). Add water to rib juices, 3/4 cups total. Whisk in the barbecue sauce to blend.

6. Grill ribs, basting with barbecue sauce mixture and turning frequently, until lacquered and charred in places and heated through, 7-10 minutes.

7. Transfer to a cutting board; cut between ribs to separate. serve with additional barbecue sauce and ENJOY!
